I will confess to being a chocoholic but know full well that I need to keep my love for cocoa reign in a little. Milk chocolate holds very few health benefits. Dark chocolate, on the other hand, does possess health benefits. So I try to stick to consuming high (cocoa) percentage chocolate, cacao nibs and raw cacao powder.
Raw cacao is a good source of Iron, Calcium, Protein, Potassium and Zinc, and a very good source of Dietary Fiber, Iron, Magnesium, Phosphorus, Copper and Manganese. Add in some yummy fats and it’s no wonder we crave it! Women need iron more than men and women who exercise need even more… sounds good to me. So introducing it into the diet in moderation makes perfect sense.
(serves 4)
- 1 cup nuts (almonds for low-fat pudding)
- 1/2 cup coconut milk (or alternate milk sub)
- 1/4 cup chia seeds
- 1/4 cup flax meal or seeds (if you have a good blender that will pulverize them)
- 1/8 cup raw cacao
- 2 dates (pitted, medjool )
If you want a sweeter version then add your favorite fruit and blend directly into the pudding… yummy!
You can then top the pudding w choc shavings, powder or fruit of choice!
