Yummy Healthy Pumpkin Muffins

Perfect Pumpkin Muffins

Healthy, delicious and perfect for an Autumn baking day.
These delectable treats are great for a midday snack or pre/post workout pick me up, assuming there are any left after you bring them fresh out of the oven! 😉

Ingredients

1 tbsp chia seeds

1 c oatmeal flour

1/2 c quinoa flour

2 tsp cinnamon

1/2 tsp nutmeg

2 tsp baking soda

1/2 tsp salt

1 can or16-oz pureed organic pumpkin

2 eggs or egg replacement

1/4 c coconut oil

1/2 c unsweetened applesauce

1 tbsp vanilla

1/2 c walnuts or pecans

Directions

Preheat oven to 350°F.

Mix dry ingredients together in a bowl. In a separate bowl, mix all wet ingredients. Fold the wet ingredients (fold in nuts if you are using them) into the dry ingredients and spoon into paper-lined muffin or greased muffin tins.

Bake for 25 to 30 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
